Cape Byron Distillery says its Mac. Liqueur Cask Whisky is a world-first blend of tradition and innovation, aging its single malt whisky in ex-bourbon casks that have been used to age its signature Brookie’s Mac. Liqueur

The distillery is located in the Byron Bay hinterland, and draws inspiration from the coastal rainforest and Brook family’s macadamia farm surrounding the distillery.

Distiller and CEO, Eddie Brook, said, “We’re macadamia farmers first and foremost with a passion for rainforest regeneration.

“Creating our Mac. Liqueur Cask has brought feelings of nostalgia from growing up with the rich aromas of roasted macadamias wafting through the kitchen.

“We thought we would have some fun and see what happens when maturing our macadamia liqueur into casks would do and now, we have something just brilliant.”

The first step is filling whisky casks with the distillery’s signature macadamia nut and wattle seed liqueur, Brookie’s Mac, which is aged to become Barrel Aged Mac. with toasted coconut and vanilla characteristics.

Brook said they had seen fortified wines with a “rich sugariness” used to season casks before, but the use of a liqueur is rare.

The distillery uses ex-bourbon casks that have previously been used at distilleries including Heaven Hill and Buffalo Trace.

The barrels are then used to finish its mature single malt whisky, imparting a distinct and unique depth of character.   

The result is Mac. Liqueur Cask Whisky with a milk chocolate, cereal sweetness, and buttery macadamia palate.

Brook said Mac. Liqueur Cask will “captivate whisky connoisseurs and enthusiasts alike with its harmonious blend of flavours, luxurious milk chocolate aromas, and hints orange marmalade finish”. 

Only 550 bottles have been produced and they will be available from 29 April at selected independent retailers, premium bars, and online at capebyrondistillery.com.
