German ingredients company, Loryma, has launched a new solution for low-fat, crispy coatings. The wheat-based Lory Crumb extrudates give breaded products a crunchy texture without the need for added fat or deep-frying.

A recent study by the German Frozen Food Institute involving 1006 participants, revealed that one-third of respondents consume ready-made products at least once a week. Convenience remains a key factor for those who appreciate the ability to prepare quick meals when lacking time or motivation, while taste remains the top priority for 81 per cent of consumers when purchasing convenience foods.

With increasing demand for easy-to-prepare products that are lower in fat and calories, Non-Fry options from the Lory Crumb range enable manufacturers to meet this challenge in breaded applications. Bouncing off health oriented trends, Lory Crumb comes in medium and coarse granulations, tailored to different substrates, and can be prepared in an oven or air fryer.

The wheat-based crumbs by Loryma eliminate the frying step entirely, both for producers and consumers. Manufacturers benefit from a more resource-efficient, sustainable and cost-effective production process, with reduced oil usage, energy savings and fewer cleaning requirements.

Loryma product manager, Birgit Grünloh, said the trend towards low-fat preparation of convenience foods using air fryers or ovens is on the rise.

“We offer manufacturers a perfectly coordinated system solution to precisely meet specific customer demands,” said Grünloh.

“This expertise creates a win-win situation: consumers enjoy the highest quality and reduced fat indulgence, while manufacturers benefit from efficient and cost-saving production.”
