Retail company, Mercato, has partnered with Fair Seafood, to provide its South Australian customers access to fresh seafood that has 100 per cent traceability to prioritise sustainability.
The store-in-store partnership means fresh, locally sourced seafood will be available at Mercato’s Campbelltown store, with a selection of high quality products delivered fresh three times each week.
Mercato founder and managing director, John Caporaso, said the company has always selected products with intention and care, to focus on ingredients that are centric to the Italian lifestyle and the Mediterranean diet.
“Fair Seafood’s approach is strongly aligned to our ethos and we’re excited to offer quality seafood that represents not only good value for our customers but also gives them total comfort knowing they’re making both an ethical and sustainable choice,” said Caporaso.
“It’s a market-style offering whereby what’s on offer is what has been caught just a day or two prior, so it’s actually a great way to try new and different fish varieties.”
Fair Seafood works directly with fishers and fisheries to ensure delivery of only the highest-grade seasonal choices, and provides ethically sourced, sustainable seafood.
Fair Seafood owner and co-founder, Amanda Prance, said current labelling laws mean it can be difficult for consumers to know where and when the fish they are purchasing might have been caught.
“At Fair Seafood, we offer 100% traceability because we work directly with the fishers and fisheries and everything is hand processed by us,” said Prance.
“What was caught yesterday is processed today and available in-store tomorrow. The selection is purely based on what is caught – and that means we’re fishing in a sustainable way while also encouraging South Australians to enjoy new and different varieties.

The Mercato Fair Seafood partnership is set to expand in August 2025 when Mercato opens its new store in North Adelaide, as part of the Eighty Eight O’Connell development. The company stated that it aims to continue its commitment to quality and focus on providing curated, quality options for its customers.
