In celebration of Lark Distillery’s 30-year anniversary, a collaboration with Seppeltsfield has produced the indulgent PARA100 from their Rare Cask Series.

The century-old Seppeltsfield Tawny seasoned casks are the crowning glory of Lark’s iconic single malt whisky. This release is proof of Lark’s history and continuous quest for innovation and proven techniques, the company says.

Seppeltsfield winery is renowned globally for its centennial cellar and its cache of Australian fortified wines. The sequel to Lark’s unprecedented PARA100 Rare Cask, edition II has been expertly crafted from LARK’s single malt whisky and finished in casks that once held 100-year-old Para Vintage Tawny.

Seppeltsfield’s Para Vintage Tawny is believed to be the world’s only unbroken lineage of single vintage wines.

With only 410 bottles available, this Rare Cask Series wafts peat from the very second you open the bottle, in combination with flavours of grilled pineapple, followed by burnt buttered toast and raspberry jam. The finish is where the age of the oak shines through, leaving mouth-watering oily citrus and sultanas, at every sip this exceptional whisky charms every sense and magnifies the moment.

The 2022 PARA100 Rare Cask carries more peat influence than its predecessor, the smokiness drives through the liquid, bringing a subtle balance to the sweetness and oak-driven fortified finish. portrait-lark_para100_fullres_004.jpeg

The House of Lark Head distiller Chris Thomson said the whisky was about unmatched indulgence, pairing Lark’s heavy complex spirit with one of the rarest wines on the planet.

“Seppeltsfield boasts some of the oldest wine casks in the country, and we are lucky enough to work with them to create this one of a kind whisky,” said Thomson.

Seppeltsfield wine Executive Chairman & proprietor Warren Randall said the release was Tasmania’s gift to the whisky world and was a match made in wine and whisky heaven.

With this purchase, consumers will have the opportunity to own a part of Lark’s rich and exciting history with a copper medallion included, meticulously handcrafted from a decommissioned Lark copper pot still. Alongside the 700ml PARA100, a complimentary bottle of 100ml is included, for the collector to enjoy and savour.
